Background:

Welcome! As you “uncover the vegan within,” be encouraged to always thirst for knowledge and seek the truths of this earth. Motivate yourselves daily to do better, while remaining humble. I thank God for my journey and hope yours also includes a restoration of your mind, body, and spirit.

Between my culture, my family, church family and friends, food has always been the center of every gathering…and there have been many! It only feels natural for me to cook, entertain, create, and enjoy food. My mother, father and aunts have truly inspired me in this regard. Although I was not raised vegan, because of religious purposes- I never did have pork or consume any shellfish growing up…which continued through my entire life.
Yep- That’s my big secret… a Puerto Rican who has never had pork, lol. Honestly, that detail always surprises folks. So many times, I’ve heard, “I’ve never met a Puerto Rican that doesn’t eat pork…” or “You’ve never had pernil…ever??” Culturally, I think some consider it a prerequisite, lol.

Journey to veganism…
In 2010, I changed my diet to vegetarian, which mirrored my husband, Seth’s diet at the time. In 2011, after watching Earthlings, we (as a family) immediately transitioned to a vegan diet. Such a powerful movie. I love documentaries, researching and just have a passion for learning. I met my match in Seth, not only is he my best friend; his thirst for knowledge has always inspired me. He’s a published author, and also ardent photographer. He’s truly a great writer.

Our journey or knowledge has brought us to become vegan. While continuing my family’s legacy with a love and passion for food, I’m creating my own legacy now through vegan food, recipes, and this blog. Become addicted to your well-being, be compassionate. Ignorance is not bliss…it is just ignorance.

    Hi, Jessica.
    I am not one bit vegan – in fact, I am resolutely omnivorous – but I love your recipes because despite the fact that I practically everything, tentacles and all, we have reduced animal protein in recent years and I’m always on the lookout for new ways to eat greens or for things I’ve never eaten.
    Keep those recipes coming!

      Thank you so much for stopping by! I truly appreciate it. I’m always trying to create new and healthy recipes. I just posted a new recipe using an ingredient that was recently new to me; I too love trying things I’ve never eaten before. It is amazing how a new ingredient can quickly become a favorite. As you continue to research and explore healthier selections I’m sure you’ll quickly find there are a lot of wholesome and nourishing options/additions for you to consider. It is great to hear about you reducing animal protein in recent years! I don’t know your reasons for reducing your animal protein intake, but I can say the food industry has changed significantly over the years. I hope to continue to inspire you to connect with your body. Continue to eat as a preventative and continue researching and learning. You get a follow in return ^_^ I really appreciate what you’re doing – I will probably never make the jump to being full vegan but I am always trying to live (and eat) more ethically! I gave up eating piggy-wigs last year (for non-religious reasons :D) and so far I haven’t missed it, so who knows? Keep up the good work and I hope I can give something back!
