Vegan Chocolate Chip Cookies

These Chocolate Chip Cookies come together very fast. I’ve been making all different kinds of cookies for so long. I developed this chocolate chip cookie recipe quickly and it came out delicious! You can easily prepare these cookies in one bowl, and with ingredients that you already have on hand. I use Earth Balance (vegan butter), light brown sugar, vanilla, soymilk, baking soda, baking powder, salt, flour, and of course chocolate chips (I used Enjoy Life brand chocolate chips). In less than 10 minutes with less than 10 ingredients, you can satisfy that sweet tooth. Cookie season is around the corner, so I’m doing a little pre-gaming. I hope you try this recipe. Enjoy!

Ingredients:
1 Stick (1/2 Cup) Earth Balance (vegan butter)
3/4 Cup Light Brown Sugar, packed
1 Tbsp Soymilk (or other non-dairy milk)
2 Tsp Pure Vanilla Extract
1 Tsp Baking Powder
1/2 Tsp Salt
1/2 Tsp Baking Soda
1 1/4 Cup All-Purpose Flour
1/2 Cup Semi-Sweet Chocolate Chips (I use Enjoy Life brand)

Directions:
-Pre-heat oven to 375 degrees F.
-In a medium bowl, add your Earth Balance (vegan butter). You can allow the butter to soften at room temperature. But since I’m preparing this as a quick cookie recipe, in a microwave safe bowl. I warmed the butter for 30 seconds in the microwave.
-Next, add the light brown sugar, soymilk, vanilla and stir to combine.
-To this, add the dry ingredients – baking powder, salt, baking soda, and all-purpose flour. Mix together to combine before incorporating the chocolate chips.
-Drop the cookie dough on a large cookie sheet – I will add one dozen (12) per pan.
-For crisp cookies, bake for 11 minutes at 375 degrees F.
-For soft and chewy cookies, bake for 8 to 9 minutes at 375 degrees F.
-Enjoy!
