Background:

Between my culture, my family, church family and friends, food has always been the center of every gathering…and there have been many! It only feels natural for me to cook, entertain, create and enjoy food – my mother, father and aunts truly inspired me in this regard.

In 2010, I transitioned to a vegetarian diet to mirror my future hubby. However, 2011 was a pivotal year for me. I married, Seth, the love of my life and best friend; then we (as a family) also became vegan that autumn. Seth was vegetarian years before we even met and on/off his entire life. I cannot say the same for myself, although I’ve never indulged in the swine because of religious purposes – thanks mom! Interestingly enough that fact always surprised people – as if eating pork was a prerequisite for a Puerto Rican or something. I’ve actually had someone say to me before, “I’ve never met a Puerto Rican that doesn’t eat pork??”…Yeah that happened.

Back to 2011 and my new husband. Seth has always inspired me with his thirst for knowledge. I thought I was something…I’m convinced there are volumes, catalogs and file cabinets of information in that brain of his. He’s an ardent photographer, writer and fellow blogger – https://humanrescue.wordpress.com/. His passion for awareness truly stimulates me to know more also; he’s a true journalist in his own right. Several articles, books and documentaries later, our quest for knowledge and awareness brought us to become vegan. While preserving my family’s legacy with a love and passion for food, I’m creating my own now through vegan food, recipes and this blog. You don’t have to be the next great chef to appreciate this blog…a simple passion for life will do. Become addicted to your well-being, be compassionate. Ignorance is Not bliss…it is just ignorance. Why choose to lack knowledge and information…Feed your minds and your body’s, while you uncover the vegan within. Thank you for visiting!

    Hi, Jessica.
    I am not one bit vegan – in fact, I am resolutely omnivorous – but I love your recipes because despite the fact that I practically everything, tentacles and all, we have reduced animal protein in recent years and I’m always on the lookout for new ways to eat greens or for things I’ve never eaten.
    Keep those recipes coming!

      Thank you so much for stopping by! I truly appreciate it. I’m always trying to create new and healthy recipes. I just posted a new recipe using an ingredient that was recently new to me; I too love trying things I’ve never eaten before. It is amazing how a new ingredient can quickly become a favorite. As you continue to research and explore healthier selections I’m sure you’ll quickly find there are a lot of wholesome and nourishing options/additions for you to consider. It is great to hear about you reducing animal protein in recent years! I don’t know your reasons for reducing your animal protein intake, but I can say the food industry has changed significantly over the years. I hope to continue to inspire you to connect with your body. Continue to eat as a preventative and continue researching and learning.     Thankyou so much for liking my blog post! You get a follow in return ^_^ I really appreciate what you’re doing – I will probably never make the jump to being full vegan but I am always trying to live (and eat) more ethically! I gave up eating piggy-wigs last year (for non-religious reasons :D) and so far I haven’t missed it, so who knows? Keep up the good work and I hope I can give something back!
