Buckwheat Buttermilk Pancakes (GF/Vegan)! Buckwheat is considered a pseudocereal, like quinoa or amaranth. For this version, I used darker buckwheat which is made from unhulled buckwheat flour. The darker buckwheat has more fiber because the hull has not been removed. These Buckwheat Buttermilk Pancakes are so delicious. They are guilt-free.
