Corn Fritters I created here a new version of an old recipe. These Corn Fritters are slightly sweet and soft and pillowy. The best bites of fluffy goodness. This recipe uses sweet corn rather than cornmeal. Leftover can be stored in an airtight container and refrigerated. Reheat in the oven at 400 degrees F for seven to ten minutes. I really hope you try this recipe. Served with a Mayoketchup (or Ketchupmayo) sauce. These Corn Fritters can be served as an appetizer or side. They also make the perfect snack. Enjoy! ~ Vegan, Dairy-free; Egg-free; Plant-based ~

Limber (de Coco) ~ Puerto Rican Coconut Icy
Limber de Coco! A Puerto Rican icy treat. Perfect to beat the heat and so simple. Limbers are an icy made from various flavors. My all-time favorite flavors of Limber are Mango, Coconut (Coco), Tamarind (Tamarindo), and Peanut Butter (Maní). This recipe is truly effortless. Far from high maintenance…this Limber de Coco recipe speaks my language of basic and no frills. No popsicle sticks or pouring into molds required. Just blend/mix, pour into a cup, and freeze. Taste our Puerto Rican culture with this Limber de Coco frozen treat. Enjoy! ~ Vegan, Gluten-free, Dairy-Free, Soy-free. ~
