I just wanted to wish our little guy a Happy Birthday again and share a birthday cake I made for him that he shared with his brother. Beanie our little Chihuahua you have brought so much joy into our lives. I love looking back at pics of you, I guess I didn’t realize you were so teeny at the time…or at least smaller than you are now anyway, haha. It was just you for alittle while before we adopted your brother Brody (our Puggle). The two of you are inseparable now; I love watching you play and cuddle together.
Our little Bean…we should have nicknamed you ‘Pogo’ since you jump so much. You’re a ball of energy and so affectionate. We love you guys!

Ingredients:
1 Cup Rolled Oats, ground into flour
¼ Cup Chickpea Flour
½ Cup Pureed Pumpkin
1/3 Cup Applesauce, unsweetened
¼ Tsp Cinnamon
1 Tbsp Flax Seeds, ground
1/3 Cup Water
Coconut Oil to grease pan
Additional Pumpkin for layers

Directions:

-Preheat oven 350 degrees. Grease 7×11 pan with coconut oil.
-Combine all ingredients spread evenly into greased baking pan. Bake for 12-15 minutes.

-I use a cookie cutter to cut circles out and layer the pumpkin between.
(You can use different cookie cutters and cut into biscuits if you like).

P.S. – Beanie did not eat the entire cake by himself. We only let him enjoy one layer. 🙂
