Easy Slow Cooker Baked Beans

Easy Slow Cooker Baked Beans! My last recipe was simple, and this one is easy. I use a box grater for the onions and garlic. Using the grater saved me time on chopping while providing all the flavors. Also, please do not feel overwhelmed by the length of time posted for this recipe. You will not have to babysit these baked beans. This recipe is perfect for a lazy day… just dump in the ingredients, then grate in the onions and garlic. That’s it. Set the slow cooker/crockpot on low and let it go. Just like that old infomercial of days past – just ‘set it and forget it.’ lol

These beans will slowly cook for 12 hours. Honestly, you can let them go longer. Alternatively, set them on the ‘keep warm’ setting after they are cooked. Keep them warm until you are ready to eat. If you need to cut down on time, set the beans on high. Cook them for 6 to 8 hours. Be sure to double-check the beans for doneness. You can also chop the onions and mince the garlic, if you choose. But I found it to be so much easier using the grater. Enjoy!

Ingredients:

1lb Navy Beans, soaked overnight

1 Small Onion, grated

2 Garlic Cloves, grated

1/3 Cup Light Brown Sugar, packed

1/4 to 1/3 Cup Molasses

1 Tbsp Dijon Mustard

2 Tbsp Ketchup

1 Tbsp Liquid Smoke

1 1/2 Tsp Salt

1 Tbsp Sugar (I used raw cane sugar)

Directions:

-The night before: Sort through beans to remove and discard any stones, debris, or damaged/discolored beans.

-Rinse beans and place them in a large bowl covered with water. Allow the beans to soak overnight or for a minimum of 8 hours.

-The next day: Drain the soaked beans and add them to the crockpot.

-Grate the onion and garlic directly over the beans in the crockpot. I used the small side of a box grater. You can also decide to chop the onion and mince the garlic.

-Then, add in the Light Brown Sugar, Molasses, Dijon Mustard, Ketchup, Liquid Smoke, and Salt.

-Set the crockpot to low heat. Then cover the crockpot. Allow the baked beans to slow cook for 12 to 15 hours until the beans are cooked.

-About halfway through the cooking or a couple hours prior to serving – add in the tablespoon of sugar.

-Enjoy!
