Nut & Seed Granola! This recipe highlights another use of the Super Seeds mix I have been using. I posted a sourdough recipe a couple of days ago. It uses the same seed mix – Super Seeds Multi-Grain Sourdough Bread. My mommy gave us this mix. She’s always gifting me food or random ingredients, and I love finding creative ways to use these gifts.

Granola is one of those quick recipes that I love having on hand. It’s the perfect meal prep item. I always make recipes like this Nut & Seed Granola on a day off or on the weekend. It is best for me to prepare this way for the upcoming week. Also, using maple syrup is the best when making granola. The scent that fills our home and it smells like a fresh batch of cookies. This recipe uses an unlikely ingredient with ground cloves. And it pairs perfectly with the peanuts and other ingredients. Cloves is a strong ingredient to use. So, feel free to cut this down to 1/8 teaspoon. You can also swap with nutmeg.

My husband generally loves eating granola as a cereal. My favorite use for granola is as a topping for yogurts or smoothie bowls. Granola is one of those simple recipes, that will save you money in the long run. I really hope you try this one. Enjoy!

Ingredients:
4 Cups Old-Fashioned Rolled Oats
1/2 Cup Unsalted Peanuts
1/2 Cup Raw Almonds
1/2 Cup Super Seeds Mix (or you can combine 1/4 Cup of Pumpkin Seeds; 1/4 Cup of Sunflower Seeds, plus 2 Tbsp of Flax Seeds, Chia, and/or Hemp Seeds)
1/4 Cup Finely Shredded Coconut (unsweetened)
1/2 Cup Coconut Oil (melted)
1/2 Cup Maple Syrup
1/2 Tbsp Vanilla Extract
1/2 Tsp Salt
1/2 Tsp Ground Cinnamon
1/4 Tsp Ground Cloves

Directions:
-Pre-heat your oven to 325 degrees F.
-In a large bowl, combine the oats, peanuts, almonds (chopped roughly), super seeds mix, and shredded coconut. Mix these ingredients together to combine.

-In a separate, medium to large bowl, combine the coconut oil (melted), maple syrup, vanilla, salt, cinnamon, and ground cloves. Whisk these ingredients together to combine.

-Next, add the oats mixture to the bowl with the coconut oil/maple. Mix all ingredients well to incorporate. Be sure that all the oats are coated.

-Line a large baking sheet with parchment paper to prevent the granola from sticking to the pan. It will get sticky from the maple.

-Add the mixed granola to the lined baking sheet in an even layer.  

-Bake for 25 to 30 minutes at 325 F, tossing halfway through. Check the granola after 25 minutes.

-Remove the granola from the oven. Allow it to cool completely.

-Once cooled, you can store the granola in an airtight container in the pantry (if it is cool) for a week. You can also store this in the refrigerator or freezer for later use.

-Enjoy!

-Note: If your home is not warm, and your coconut oil is solid – you can heat the coconut oil in a saucepan or in the microwave before adding the next ingredients in the step above.
