Guineos en Escabeche! Guineos en Escabeche (sin mollejas) also known as Guineitos en Escabeche. This Puerto Rican dish is a pickled green banana salad. This is one of my favorite recipes! Guineos en Escabeche is made with: Green Bananas, Onions, Olive Oil, Vinegar, Bay Leaves, Black Peppercorns, and seasonings.
