Easy Personal Pizza with Spinach, Shallots & Dates!
Easy Personal Pizza with Shallots & Dates! Dates on pizza?… Yes, and they are so good! These Personal Pizzas with shallots and dates deliver a beautifully delicate sweetness. The ingredient list below includes pizza topping suggestions, rather than exact measurements. I used Kontos brand pizza crusts as these are more of a personal sized pizza. A few tablespoons of store-bought pizza sauce and about a quarter cup of vegan cheese. For the veggies, I used baby spinach, shallots, garlic, medjool dates, extra virgin olive oil, and tomatoes. Bake at 400 degrees F for 10 minutes for the perfectly crispy pizza. Enjoy!

Pastelillos ~ Vegan (Puerto Rican Meat/Cheese Turnovers)
Pastelillos ~ Vegan (Puerto Rican Meat/Cheese Turnovers)! These Pastelillos can be filled with several different fillings. You can make them from savory to even sweet. However, growing up we typically ate them with cheese or ground beef. So, this veganized version is made using Gardein Ground Crumbles and Violife Cheddar Cheese. Pastelillos can be fried in a deep fryer or in a pan. Pastelillos are overall so popular and typically the first thing to go at every event or family function.
