Have you ever added dates to your pizza? I’ve always loved eating pizza with a sweeter sauce. These Personal Pizzas with shallots and dates deliver a beautifully delicate sweetness. For this recipe, I’m just including a list of ingredients as a suggestion, rather than exact measurements. In general, since I’m using the Kontos brand pizza crusts again, these are more of a personal sized pizza. I used a few tablespoons of store-bought pizza sauce and about a quarter cup of cheese. For the veggies, I chopped baby spinach in a chiffonade. I took half of the baby spinach and sauteed it with the shallots, garlic, and medjool dates. Sauté the veggies in a couple of tablespoons of extra virgin olive oil for a couple of minutes. The other half of baby spinach was added to the top of pizzas. This pizza was also topped with the sliced tomatoes and sauteed veggies. I used Violife brand cheese and baked these up for a few extra minutes. The package suggests only five minutes. Place them on a sheet pan. Then bake them at 400 degrees F for 10 minutes, your crust will be perfectly crispy, but still soft. Enjoy!

Storebought Pizza Sauce (I used Rao’s brand)
Extra Virgin Olive Oil
Fresh Garlic, sliced
Shallots, sliced
Medjool Dates, sliced
Fresh Baby Spinach
Fresh Basil
Vegan Mozzarella Cheese (I used Violife brand)

The ingredient list below includes pizza topping suggestions, rather than exact measurements. I used Kontos brand pizza crusts as these are more of a personal sized pizza. A few tablespoons of store-bought pizza sauce and about a quarter cup of vegan cheese. For the veggies, I used baby spinach, shallots, garlic, medjool dates, extra virgin olive oil, and tomatoes. Bake at 400 degrees F for 10 minutes for the perfectly crispy pizza. Enjoy!

Ingredients

  • Extra Virgin Olive Oil

  • Fresh Garlic, sliced

  • Shallots, sliced

  • Fresh Medjool Dates, pitted/sliced

  • Fresh Baby Spinach, chiffonade

  • Fresh Basil, chiffonade

  • Vegan Mozzarella Cheese (I used Violife brand)

Directions

  • -Preheat oven to 400 degrees F.
  • -To the personal pizza crust, add a few tablespoons of store-bought pizza sauce.
  • -For the veggies, chop a portion of the baby spinach and fresh basil in a chiffonade.
  • -In a pan, add a couple of tablespoons of extra virgin olive oil. Take another handful of baby spinach. Then sauté the spinach with the shallots, garlic, and medjool dates for a couple of minutes.
  • -To the pizza, add the fresh chopped/chiffonade spinach, and sauteed veggies. Top with tomatoes and a quarter cup of cheese.
  • -Place them on a baking sheet and bake at 400 degrees F for 10 minutes.
