Mayo Dressing ~ Lentil & Hummus Wrap! This mayo dressing is so easy to make. We are in a heat wave here on the East Coast-U.S. Frankly, it is way too hot to even turn on the stove, let alone the oven. I still had some veggies available from yesterday’s wrap, so I whipped up this mayo dressing to make another wrap. Fresh, light and with lentils a good source of protein. This total wrap is about 16g of protein.

This mayo dressing and wrap are worth a try. Enjoy!

Mayo Dressing ~ Lentil & Hummus Wrap

Mayo Dressing – Ingredients:

2/3 Cup Vegan Mayonnaise (I used Vegenaise)
2 Tsp Dijon Mustard
3 Tbsp White Vinegar
2 Tbsp Extra Virgin Olive Oil
1/2 Tsp Dried Parsley
1/2 Tsp Oregano
Salt/Pepper to Taste

Directions:

-In a small/medium bowl, add all mayo dressing ingredients together and whisk to combine.

-This recipe makes about one cup, which is good for about four to five wraps.
-Cover and store any unused dressing in the refrigerator for up to three days. Whisk or shake if any separation occurs.

-For the wrap:
I used a Spinach or Sundried Tomato wrap. Then added hummus, lettuce, cucumbers, radishes, carrots, lentils, and parsley.
