Sloppy Joes ~ Vegan! An oldie but a goodie. Sloppy Joes are so good and so simple. Of course, you certainly can use store-bought Sloppy Joe sauce, but why not make your own unique sauce. Homemade sauce for Sloppy Joes is super quick and you can easily season it to your liking. This Sloppy Joe recipe came out delicious, I really hope you try this one. As a note, you can use ketchup, brown sugar, and liquid smoke to flavor your sauce. Just in case you do not have any barbecue sauce. Enjoy!

Ingredients:

1 (14oz package) Gardein Crumbles (or other beefless vegan crumbles)
1 Red Pepper, seeded/chopped finely
1 Orange Pepper, seeded/chopped finely
3 to 5 Garlic Cloves, minced
1 Yellow/Sweet Onion, chopped
12oz Carrots, diced/chopped
1 (28oz can) Crushed Tomatoes
1 (15oz can) Tomato Sauce
2 Tbsp Balsamic Vinegar
2/3 Cup Barbecue Sauce
1 Tbsp Sugar (I used raw cane sugar)
Extra Virgin Olive Oil for Cooking
Salt/Pepper to Taste
Buns/Rolls to serve

Directions:

-In large non-stick pan, heat a couple of tablespoons of oil and add the Gardein crumbles. Cook for about seven to eight minutes stirring often. Remove from pan and set aside.

-Add an additional couple of tablespoons of olive oil back to the pan. This this the garlic and sauté for about one to two minutes.

-Next, add the onions, red and orange peppers, and carrots. Cook down veggies for about five to seven minutes until softened. Stirring occasionally.

-To the veggies, add the balsamic vinegar, tomato and barbecue sauces, and sugar. Then stir to combine.

-Reduce heat to low and cover then pan. Continue cooking for about six to seven minutes., stirring occasionally.

   -Optional: Use an immersion blender if you have one. Gently pulse the sauce mixture to preferred smoothness. This creates a consistency similar to store-bought Sloppy Joe sauce. Alternatively, you can remove a portion of the sauce and blend in a blender until smooth.

-To the sauce, add the cooked Gardein (beefless) crumbles back to the mixture and stir to combine.

-Serve on a bun or roll.

-Enjoy!
