Peanut Brittle is super simple to make. This crunchy candy is crisp and brittle, true to its name. A perfectly sweet treat that is easy to make. And this recipe was created without the use of a thermometer, so I really hope you try this one.

There is something remarkable about cooking from scratch. Honestly, some recipes are just so easy to make from scratch that I will never go back to storebought. For example, making Granola or Chocolate Pudding are much easier than you think. Try my Easy Maple Granola recipe!

It’s so easy!

You begin this recipe by adding the sugar, water, corn syrup, and vanilla in a saucepan. Heat this mixture over a slow bubble/boil for twenty minutes. Then, remove from heat, and stir in the cinnamon, vegan butter, baking soda, and peanuts. Quickly, pour out onto a baking sheet lined with parchment paper. Allow the mixture to cool and break apart. That is, it. Enjoy!

Ingredients:

2 Cups Sugar

1/2 Cup of Water

1 Cup of Light Corn Syrup

1 Tsp Vanilla

1/8 Tsp of Ground Cinnamon, optional

3 Tbsp Vegan Butter (I used Earth Balance)

1 1/2 Tsp Baking Soda

2 Cups of Dry Roasted Peanuts

Course Sea Salt to Top, optional

Directions:

-Line a 10×15 pan (or larger) with parchment paper.

-In a saucepan, add sugar, water, corn syrup, and vanilla. Stir ingredients to combine. Then, bring mixture to a slow simmer over medium-high heat.

-After the mixture begins to bubble. Reduce heat to medium and allow the mixture to cook down without stirring for 18 to 20 minutes. This should turn into a rich golden-brown color.

-While your sugar mixture is slowly boiling, measure out your remaining ingredients (cinnamon, vegan butter, baking soda, and peanuts).

-Once golden brown, remove the sugar mixture from heat. Then, add cinnamon, vegan butter, baking soda and peanuts. Stir to combine and quickly pour out mixture onto the lined baking sheet.

-Allow the Peanut Brittle to set at room temperature for 20 to 30 minutes. It should be cool to touch.

-Next, break apart into pieces and store in an airtight container at room temperature.

-Enjoy!

Notes:

-If you do not have parchment paper, you can lightly grease your pan with cooking spray.

-It took my mixture about 4 1/2 minutes to come to the initial boil. Before starting the 20-minute countdown and reducing the heat.

-I used dry roasted unsalted peanuts. If you use salted peanuts omit the additional salt added as a topping.

-CAUTION: Always use caution when making any candy. Do not touch the sugar/corn syrup mixture during any part of the cooking process as it can cause serious burns. Allow the Peanut Brittle to cool completely until it is safe to handle.
