Guacamole! …and a memory.

Guacamole! I really enjoy making guacamole and fresh salsa. At times I just crave the freshness of cilantro and fresh herbs. Also, it doesn’t hurt, I’m a genuine avocado lover. In this house we can put away some avocado toast, lol. Guacamole in general is perfect for special occasions, BBQs, or game day. Add some chips, pair the guac with salsa and enjoy!
Whenever I make guacamole, I do get sad at times. I always think of the first time I posted a guacamole recipe on my blog – Easy Delicious Guacamole. This particular recipe was posted back in June 2015 and in that post my doggies photobombed the pic, lol. My Brody is no longer with us, he passed away a few years ago, but I miss him every day. But when I think of him, it always warms my heart. We rescued him, but he rescued us… he was such a good boy. Despite this memory and nostalgic moment, I really hope you try this recipe. Think of lost loves and keep them in your memory this day.

Ingredients:
5 Medium/Large Ripe Avocados, chopped
2 Jalapeños, seeded and minced
1/2 White Onion, chopped
2 Roma Tomatoes, seeded/chopped
4 to 5 Cloves of Garlic, grated
1 Handful/Bunch of Cilantro, chopped
1 Lime, juice/zest
Salt/Pepper/Cumin to taste
Directions:
-Prepare and chop the Jalapeños, Onions, and Tomatoes. For the Jalapeños, dice them by slicing in half, then removing the seeds and membranes. Slice the top/end off of the Tomatoes and squeeze them to remove the seeds. Then, dice the seeded tomatoes to chop. For the Garlic, you can mince, but for this recipe I prefer to use a microplane to grate the garlic.



-In a medium/large bowl, combine all of the ingredients to combine. You can add additional Avocados as needed to ensure a proper ratio to the onions and remaining ingredients.

-Mix together with a fork to combine. Adjust seasonings to taste. I use about a 1/4 Tsp of Ground Pepper, 1/2 Tsp of Salt, and 1/4 to 1/2 Tsp of Cumin.
-Cover, refrigerate and serve chilled with chips, pretzels, pita chips, etc.
-Enjoy!
