Corn Fritters I created here a new version of an old recipe. These Corn Fritters are slightly sweet and soft and pillowy. The best bites of fluffy goodness. This recipe uses sweet corn rather than cornmeal. Leftover can be stored in an airtight container and refrigerated. Reheat in the oven at 400 degrees F for seven to ten minutes. I really hope you try this recipe. Served with a Mayoketchup (or Ketchupmayo) sauce. These Corn Fritters can be served as an appetizer or side. They also make the perfect snack. Fried Oyster Mushrooms! Fried Oyster Mushrooms… better than fried chicken! These vegan fried oyster mushrooms are crispy and delicious. Oyster mushrooms are meaty and perfect for this type of fried recipe. You can adjust the seasoning to taste and use what you have available. For example, I’ve made this previously using hot sauce, but this time around I used Gojuchang. Also, I had dried sofrito seasoning available, but you swap for garlic powder, onion powder, Italian seasoning etc. Enjoy!

Jerk Cabbage ~ Vegan! This Vegan Jerk Cabbage recipe has Caribbean flavors all throughout. I infused Puerto Rican flavors from the Sofrito with the Jamaican flavors of jerk seasonings. The Jerk Seasoning includes Thyme, Turmeric, Ginger, Allspice, and peppers. This Jerk Cabbage came out perfectly seasoned and balanced.
