Fried Oyster Mushrooms

Fried Oyster Mushrooms …better than fried chicken! These vegan fried oyster mushrooms are crispy and delicious… so good! Oyster mushrooms are meaty and the perfect mushroom for this type of fried recipe. As with so many of my recipes, I encourage you to adjust seasoning to your liking. I used Gojuchang because I had this available. But I’ve made this recipe previously using hot sauce, which adds great flavor too. This time around I used dried sofrito seasoning. However, if you do not have this available, you can instead add garlic powder, onion powder, Italian seasoning etc. I really hope you try this one. Enjoy!

Ingredients:
24oz of Oyster Mushrooms
Oil for frying
Salt/Pepper to taste

Wet:
2 1/2 Cup Soymilk
2 Tbsp Apple Cider Vinegar
1 Tbsp Gojuchang (or hot sauce)
2 Tbsp Cornstarch

Dry:
3 Cups All-Purpose Flour
2 Tbsp Cornstarch
1 Tsp Onion Powder
2 Tsp Adobo Seasoning (Goya)
1 Packet of Sofrito (dried/seasoning)
1 Tsp Salt

Directions:
-Wipe the mushrooms clean with a damp cloth and cut mushrooms to divide and break down larger pieces. Also, cut off to remove tough pieces at the base of the stem.
-In a medium bowl, mix together the wet ingredients and whisk together to combine.
-in a separate bowl, add the dry ingredients and whisk together to combine.
-In a large pan or deep fryer, heat oil to 375 degrees F. Be sure to add enough oil to deep fry.
-Next, add your mushroom pieces first into the wet batter, then toss in the dry mixture. Shake off excess flour.
-Work in batches and fry the oyster mushrooms until golden and crispy, about three to five minutes. I turn about halfway through. Be sure that you also do not overcrowd the pan.
-Remove the fried pieces and allow them to drain on a paper towel or on a mesh tray, if available. I always salt straight out the fryer too – sprinkle with additional salt/pepper to taste.
