Sorullos o Sorullitos de Maíz (Puerto Rican Corn Sticks)

Sorullitos are a quick cornmeal-based treat. These are perfect as a side, appetizer or even breakfast. My favorite way to eat these are served up next to white rice with beans (habichuelas guisadas). They are the best with ketchupmayo as a dipping sauce. *I ran out of Vegenaise earlier this week… so no ketchupmayo today. ☹
Full disclosure our cupboards/pantry were looking kinda bare. I definitely needed to hit the store and re-stock, but just hadn’t had a chance the last few days. So, I opened the pantry and saw the cornmeal staring back at me. Nostalgia immediately hit me. There were some hard times growing up, but we never knew it. My mother always cooked and found a way to create something spectacular for dinner like a superhero.

Ingredients:
2 Cups Water
1 Tbsp Vegan Butter (Earth Balance)
1 1/2 Cups Finely Ground Yellow Cornmeal
2 Tbsp Maple Syrup
1 Tsp Salt
3 Tbsp Nutritional Yeast, optional
Oil for frying

Directions:
-In a medium or large pot bring water to boil and add salt/vegan butter.
-Reduce heat to low and add cornmeal, maple syrup, and nutritional yeast. Stir to combine.
-Continue stirring mixture for about 4-5 minutes, until the mixture forms a dough-like ball.
-Set the mixture aside to allow it to cool to the touch.
-Next, grab a small handful of the mixture (about 2 tablespoons) into your hand to form the sticks. You can also grab a piece of parchment paper and roll into a cigar shape.
-In a frying pan, heat oil for frying. Add corn sticks and fry for a couple of minutes on each side.
-Enjoy!

Note: Maple Syrup can be swapped for sugar, which I would add during the boiling water step.

Cabbage Savage

(Serves 6-8) ~ Vegan, Gluten-Free, Soy-Free

This cabbage has a slight kick but you can add/adjust as needed. It is super addicting – hence the name… this cabbage is fierce.

I watched some new documentaries recently that I will update on my list. Netflix has some great documentaries and not just the food ones. I watched The Human Experiment and Plastic Paradise. Not only are GMO’s a concern for us but what about the other countless “invisible” toxic chemicals that we are exposed to? It’s no wonder there has been such an increase in: cancer, dementia, autism, obesity, etc. It seems we are really dropping the ball here. It’s like a question of what came first, the chicken or the egg… except it’s more like, the chem industry or the pharm industry.

Ingredients:
1 Head Green Cabbage, cleaned and chopped/shredded (I just use my knife)
1 Tbsp Canola Oil
3 Tbsp Earth Balance (vegan butter)
½ Tbsp Crushed Red Pepper Flakes
2 Tsp Minced Garlic
2 Tsp Salt
1 Tsp Course Black Pepper
½ Tsp Chili Powder
½ Tsp Tarragon

Directions:
-Clean and shred cabbage then set aside. I just slice it up on my cutting board. Be sure to remove the outer thick leaves and quarter/core before shredding and washing.

-In a large pot, heat canola oil over medium-high heat. Add red pepper flakes and minced garlic and heat through for about 1-2 minutes. (Be careful it can quickly burn).
-Add Earth Balance butter and cabbage. Cover and let it cook down for about 10 minutes.
-Stir after 5 minutes so it all sautés and begins to cook evenly.

-After 10 minutes stir again and add seasonings: salt, pepper, chili powder and tarragon. Cover and continue cooking.
I cook for a total time of about 20 minutes and then I turn off heat and allow it to sit for 5 minutes before serving – but keeping the lid on. Enjoy!

Guacamole – Simple and Delicious!

Easy Delicious Guacamole
(Makes 1 Bowl/Batch) – Vegan, Gluten-Free, Soy-Free
Raw (swap Sriracha for Chili Powder)

I’m obsessed with Avocado toast. Very simply put it is Avocado with salt/pepper on a slice of toast, sometimes I’ll drizzle a splash of Extra Virgin Olive Oil. If you love Avocado then this should quickly become a part of your ‘quick’ breakfast lineup.
Some mornings it’s ‘every man for them self’ as my husband would call it. The kids will typically gravitate towards cereal or oatmeal and fruit while my husband generally has grits or cereal with some fruit or toast for example. This particular morning I planned on my usual Avocado toast, but looking around I had all the components that I use to make Guacamole, another favorite. So Guac on Toast it is! Enjoy.

Ingredients:
2 Med./Large Haas Avocado, pitted
1 Sm-Med. Tomato, seeded & chopped
1 Small Bunch Cilantro (Abt 2 Tbsp), chopped
1 Garlic Clove, minced
½ Tsp Sea Salt
¼ Tsp fresh Ground Pepper
½ Tsp Cumin
Juice of 1 Lime
¼-½ Tsp Sriracha or Chili Powder

Directions:
-Seeding Tomato: Cut the tomato in half and gently squeeze to remove the liquid and seeds. Then Dice up tomato.
