Cilantro Sauce

This cilantro sauce is flavorful and bright.
We are back to an empty nest, which means a lot of rice and beans (our favorite)! Seth and I can go hard with rice and beans, and frankly we are just two simple people. Today I made a crockpot full of red kidney beans (Puerto Rican-style) with sofrito, adobo, and garlic (I love garlic!) ~pictured below. The beans were served with brown rice and a baked potato. Tomorrow, I plan to make roasted veggies to accompany the rice/beans and wanted to make this cilantro sauce to go with it. Since I made the cilantro sauce today, I added it to my bowl of rice/beans and baked potato. Delicious! This tasty cilantro sauce can be added to so many dishes and it is so easy to make. Enjoy!

Ingredients:
2 Bunches of Fresh Cilantro (bottom half of stems removed)
2 Garlic Cloves
1 Shallot
1 Tsp Salt
1/2 Ground Pepper
2 Tbsp Agave Nectar
3/4 Cup Extra Virgin Olive Oil
Juice of 2 Limes
Directions:
-Blend all ingredients together until smooth. I used a NutriBullet to blend.
Note: Store leftovers sauce in an air-tight container (I used a 16oz juicing jar) for about a week.
