Lupini Pasta & Peas with Spicy Peanut Sauce
(Vegan ~ Serves 6-8)

My husband and I were in Whole Foods a few weeks ago and I came across a container of lupini beans. Lupini beans have an impressive amount of protein. My one son is always looking for protein-rich foods, so I took a picture of the container to send him.
Recently, I came across lupini pasta which also has high-protein content. Inspired to create a protein packed meal, on a night I did not feel like cooking – I was quickly on track to make a fast 30-minute or less meal.

Protein-packed: Lupini pasta, Peanut Butter and Tofu.

Ingredients:
2 Tbsp Extra Virgin Olive Oil
2 Tbsp Minced Garlic
1 Tsp Crushed Red Pepper Flakes
1/4 Cup Creamy Peanut Butter
2 Tbsp Soy Sauce
1/2 Cup Water
1/2 Pasta Water
16oz Frozen Sweet Peas
16oz Lupini Pasta
Salt/ Pepper/ Garlic powder to Taste

Directions:
-Prepare according to package. -In large pot, boil 7 to 8 minutes until al dente.
-In a large pan, heat olive oil over medium-high heat. Add garlic and red pepper flakes, sauté for about two minutes.
-Turn heat to low and add peanut butter, soy sauce, pasta water and peas. Stir to combine and allow peas to cook through for about five minutes. Add additional water (note: you can add additional pasta water for the other half cup, if desired).
-Drain pasta and add to peanut sauce to combine.
-Add salt, pepper, and garlic powder to taste.

*Tip: Make extra sauce! I make a lot of pasta with peanut sauce recipes and the next day, I always add additional sauce when re-heating to refresh the dish.
