White Pizza with Spinach

White Pizza! So, it seems that I’m still on a Béchamel kick, lol. Here you will find another variation of this white sauce, which is also perfect for a White Pizza. For pizza recipes, I typically like to just add the list of ingredients as a suggestion, rather than exact measurements. But since I prepared a Béchamel sauce, I included the steps below. White Pizza/Pizza Bianca does not use a traditional tomato sauce, so this quick garlicky creamy white sauce is perfect. I love adding veggies to my pizzas also and included baby spinach for this recipe. Instead of leaving the baby spinach whole, try a chiffonade cut instead! Roll up the baby spinach tightly and cut the spinach into long thin strips. It looks so beautiful on pizza.
For this recipe, I used Kontos brand pizza crusts. I love this brand; they also have great pita bread – check out my Mediterranean Hummus Wraps – recipe found here! These make for the perfect mini/personal pizzas. Their packaging references pizza in five minutes. However, since I’m using vegan cheese, along with the white sauce, I baked these up for seven minutes instead. I also have another pizza recipe coming tomorrow with a surprise ingredient! That recipe was baked for ten minutes using the same crust. The additional time works great because these are baked on a cookie sheet and the crust comes out perfectly crispy yet still soft. As with all recipes – I really hope you try this one. Enjoy!

Ingredients:
2 Storebought 7-inch Pizza Crusts (I used Kontos brand)
2 Tbsp Vegan Butter (I used Earth Balance)
1 Tbsp Minced Garlic
1 Tbsp All-Purpose Flour
1/2 Cup Soymilk
1/4 Tsp Salt
1 Tsp Onion Powder
1/2 Cup Baby Spinach
7-8 Fresh Basil leaves
1/4 Tsp Crushed Red Pepper Flakes
1/2 Cup Vegan Mozzarella Cheese (I used Violife brand)

Directions:
-Pre-heat the oven to 400 degrees F.
-For the white sauce – in a saucepan, heat the vegan butter over medium high heat for one minute to melt the butter.
-Next, add the minced garlic and stir to combine. Cook for about two to three minutes before adding the flour. Stir in the flour to incorporate creating almost a paste. Just before adding the soymilk. Reduce heat to medium-low.
-Add the soymilk, onion powder, and salt. Stir to combine and cook for about three to four minutes. This will reduce into a thick creamy sauce.
-Next, add the vegan mozzarella and stir to combine. I cook this for about two minutes just until the cheese melts.
-For the pizza – cut the baby spinach and fresh basil into a chiffonade.
-Place your pizza crust on a cookie sheet. Add a layer of white sauce, then spinach and fresh basil.  
-Top with crushed red pepper flakes, if using. Then top with additional mozzarella cheese and more sauce.
-Bake for seven minutes at 400 degrees.
-Enjoy!
