Guineos en Escabeche (sin mollejas) also known as Guineitos en Escabeche. This is one of my favorite recipes. This Puerto Rican dish is a pickled green banana salad. Sometimes this recipe is made with mollejas (chicken gizzards). But I honestly never really cared for that version (before I became vegan, of course). So, let’s talk about my favorite version. It is similar to the recipe I put together below. Which is made with: Green Bananas, Onions, Olive Oil, Vinegar, Bay Leaves, Black Peppercorns, and seasonings. There are also several ways you can boil the Green Bananas. I have seen them boiled with the skin on (whole). Or with the skin off (whole). Alternatively, with the skin removed and sliced. My mom’s pro-tip was to boil them sliced up, because it is quicker. I absolutely love the tangy zing that the vinegar offers. But, if you want less of a vinegar taste. Dial it back by a quarter cup, if so, adjust the oil too. I also like what the addition of the Lemon Pepper seasoning adds, but this is optional. You can add additional Adobo and as always adjust the seasoning to taste. This recipe is best served after being refrigerated, but I have been guilty of eating it while still warm. Ingredients:
6 to 8 Green Bananas, peeled/sliced
1 Large Spanish/White Onion, sliced
1 Cup Avocado or Extra Virgin Olive Oil (good quality)
3/4 Cup Vinegar (I used white vinegar)
5 Bay Leaves
1/2 Tbsp Black Peppercorns
2 Tbsp Garlic, minced
9 Salad Olives (pimiento/pepper stuffed), sliced
1 (4oz jar) Sliced Pimientos
1 Tsp Salt
1/2 Tsp Adobo
1/2 Tsp Lemon Pepper, optional

Directions:
-In a small pot/saucepan, add the onions, oil, vinegar, bay leaves, peppercorns, garlic, olives, pimientos, and seasonings. Stir the ingredients together, and heat over high heat to bring to a boil. Once this comes to a boil, reduce heat to low and continue to simmer for 20 minutes.
-Meanwhile, fill a larger pot with water and bring to a boil (enough water to cover the green bananas).
-Add the sliced green bananas and boil for approximately 10 minutes. You should be able to place a fork through easily through the green bananas.
-Remove the green bananas and drain the excess water.
-In a large bowl, combine the cooked green bananas with the oil/vinegar mixture.
-Refrigerate until chilled or overnight.
-Enjoy!
